Most Basic/Delicious Chicken Parm Ever

Image
I just indulged in an amazing dinner - tried to stick with a smaller portion. But I made a super basic chicken parm and holy moly it was good. I’m not italian at all - I don’t claim to be. Dad - you would honestly love this.  I tenderized the chicken and breaded each piece with bread crumbs, flour, parm cheese, and garlic salt.  Then threw it in the pan - few minutes each side. After all the cutlets were done, I added half the chicken cutlets to a glass baking dish with sauce and sprinkled with mozz cheese.  The sauce consisted of whole peeled tomatoes, salt, pepper, and garlic salt. So basic. I usually throw in veggies, and garnishes like parsley, and a bunch of different things.  I loved how simple this was ... I also made some penne and asparagus on the side.  This was the kids plate - I added sauce to their pasta but kept their chicken plain.  Oh and I forgot two Peloton classes that I really, really love. They are worth mentioning: The Flash 15 (with...

2021 Beach Days & NYE

Image
First beach days of 2021! We went to Covell Beach in the Cape today and the boys got soaked. They had so much fun.   What our NYE looked like - I got ready, did my makeup and put on a dress.  It lasted for about an hour then immediately put on my leggings and glasses lol.  We enjoyed some Veuve at midnight and a nice cab during dinner. I made some top sirloins, sautéed onions and spinach to go with the red wine.  The boys enjoyed some OJ courtesy of Gramps on New Years Day! We then made a firepit and Jims been clearing more of our yard here in the Cape. Tomorrow we are off to grab some more oysters and hang for Uncle Joes birthday! Cal and Dad had a cheers to the new year, too! I hope everyone had a great and safe NYE - here’s to a better 2021!! All for now.  xo, Shaz

“Waiting Is Not Easy”

Image
I wanted to take a second to remember this story because it was soooo funny to me and I don’t want to forget it. Last night, I brought Conor and Caden to the dollar store to have them pick out some presents for their brothers. I gave them each a $5 dollar bill and I told him to look throughout the store for things that they would like for their brothers - NOT themselves. As we were leaving the store, I told the boys we needed to wait for Christmas to open these presents. We were not going to play with them when we got home. I told them that waiting was not fun and that waiting is not easy.  Saying these words out loud reminded me of a book called “waiting is not easy”. I told them that we actually owned that book and that later that night I would read that book to them.  Hours went by and I started dinner. And then I started bedtime. After they all had a bath, we talked about reading a bedtime story. Typically the boys now read me a short story and then I read one to all of th...

Cake Pop Fun!

Image
These were fun - but took SO LONG to make. Lots of steps, and I’m certainly not a patient person. I am glad I made them, but I likely won’t do it again. Haha  I started with a homemade cake - just a simple vanilla cake recipe with these ingredients.  The confectioners sugar was for the frosting.  I blended the cake ingredients together and baked it.  Conor helped with the frosting! This one of their favorite things to help me with.  I then wrapped an empty box and stabbed the sticks in it - hoping it would help hold them upright while they were drying. Spoiler alert: It didn’t really help. They kept falling and it was miserable.  Cake is done! I let it cool and then crumbled it up. I also made vanilla pudding - thinking I would add it to the cake crumbles to make the balls, but I opted to add frosting instead. So the boys ate the pudding.  Crumbled cake, pudding (didn’t use it), ice cream scoop, different colored frosting, sprinkles, and gold dust!...
