Most Basic/Delicious Chicken Parm Ever

Image
I just indulged in an amazing dinner - tried to stick with a smaller portion. But I made a super basic chicken parm and holy moly it was good. I’m not italian at all - I don’t claim to be. Dad - you would honestly love this.  I tenderized the chicken and breaded each piece with bread crumbs, flour, parm cheese, and garlic salt.  Then threw it in the pan - few minutes each side. After all the cutlets were done, I added half the chicken cutlets to a glass baking dish with sauce and sprinkled with mozz cheese.  The sauce consisted of whole peeled tomatoes, salt, pepper, and garlic salt. So basic. I usually throw in veggies, and garnishes like parsley, and a bunch of different things.  I loved how simple this was ... I also made some penne and asparagus on the side.  This was the kids plate - I added sauce to their pasta but kept their chicken plain.  Oh and I forgot two Peloton classes that I really, really love. They are worth mentioning: The Flash 15 (with...

Peloton Update!!!

Image
I know, I know. You guys have been anxiously awaiting my peloton update since my bike arrived on Jan 25th.  In short, I ABSOLUTELY LOVE IT. I have honestly not had a good hard workout since probably 2010. Sure, I have done short workouts, gone for walks, hikes etc but this is a whole different level. This is like HARD. It pushes me and best of all, it makes me want to workout.  The newness will eventually wear off, but for now I love it and love how the bike is making me feel. It’s driving energy, positivity, making me eat better, work better, etc. Overall, I feel BETTER. And that’s the most important thing.  My kids chant “go shaz by the sea!” (My username) while I am on the bike. It’s so cute. They also say “wow mom, you are going so fast” or “you are doing so much better than her!” Haha which obviously makes me giggle.  Favorite classes you ask? Favorite instructors? Ok. These are my absolute favorites.  I love Ally LOVE!! She is so motivating and so awesome....

DIY Projects - Vow Renewal in CAPE COD

Image
Happy SUMMER VACATION!!  We finally finished remote learning and I couldn't be happier. It was getting to be quite challenging having all three boys join their calls (which were often around the same time) while working remote. Now we are enjoying some more time outside in a less structured manner. I am not constantly looking at the clock wondering who has a call next. With that said, Jim and I are now in full planning mode for our 10 year anniversary/vow renewal this summer on 7/10/2020.  We are having a little get together with family and friends in the Cape since we will head down there for the Fourth of July. My talented friend Jill is taking photos and she is also offering mini sessions for families since we will all be dressed up and on the beach - why not?! I have been working on some DIY projects to decorate.  I am NOT a creative or artistic person, so this has been challenging for me - but also a bit fun!  We started first with crafting our own Fa...

Thankful for this WEATHER!

Image
Thursday 3/26 Absolutely loving this weather. It is SO great to be outdoors.  I have now been on prednisone pills for about 4 days and I am feeling great - no itching really at all. There are some serious side effects though, especially during this COVID-19 pandemic. I am now immune compromised and really cannot come into contact with anyone except my immediate family.  My mom has come over a few times, but has taken her jacket/shoes off, washed her hands repeatedly, and kept her distance. I need to be REALLY careful.  She has brought both me and Conor our meds, as well as milk and other necessities. She has been really helpful.  My doctors at MGH and Dana Farber have been insistent to stay away from anything that could compromise my immune system. That said, I am happy to have some itch relief. I do have some strange side effects like awful sleeping (I am literally up all night), little dizziness, swelling and weight gain. Sucks - but hoping I ca...
