Decorating Easter Eggs!

Grammy helped us decorate Easter eggs today! We had a few doctor appointments earlier in the day and then ended the afternoon with some Easter fun. For anyone that knows Conor, you would know he is obsessed with eggs. In fact, Easter is his Christmas. It’s literally his favorite holiday. My mom helped us by getting the decorating kit and the eggs. I boiled them this morning before our doctor appointment and then we were smooth sailing this afternoon!    Here are a few before pics...   Some “during” pics... Read Across America Week!

What a fun week in first grade!!! This week focused on lots of ‘reading’ themes for “Read Across America Week” On Monday, the boys brought their favorite book to school (virtually).  They each brought a different book from Elephant and Piggie series. On Tuesday, it was Culture day. We read a few book based on our culture, and other things that make us “us”. For example, I read “Good Morning Cape Cod” which talks about US history and Plymouth Rock. On Wednesday, they dressed up as their favorite book character. And today they dressed as 100 year old versions of themselves for the 100th day of school! Look at my little old men! We also did haircuts mid week!  On Wednesday, Conor and Caden dressed as “Harold” from Harold and the Purple Crayon; Auntie Chrissys favorite book. Two highlights with my other two favorite guys this week: “Hanging” with Papa - yes, Conor is in the red haha.  Reading with Dad - keeping the theme of the week alive.  Have a great weekend! xo, Shaz...

Most Basic/Delicious Chicken Parm Ever

I just indulged in an amazing dinner - tried to stick with a smaller portion. But I made a super basic chicken parm and holy moly it was good. I’m not italian at all - I don’t claim to be. Dad - you would honestly love this.  I tenderized the chicken and breaded each piece with bread crumbs, flour, parm cheese, and garlic salt.  Then threw it in the pan - few minutes each side. After all the cutlets were done, I added half the chicken cutlets to a glass baking dish with sauce and sprinkled with mozz cheese.  The sauce consisted of whole peeled tomatoes, salt, pepper, and garlic salt. So basic. I usually throw in veggies, and garnishes like parsley, and a bunch of different things.  I loved how simple this was ... I also made some penne and asparagus on the side.  This was the kids plate - I added sauce to their pasta but kept their chicken plain.  Oh and I forgot two Peloton classes that I really, really love. Peloton Update!!!

I know, I know. You guys have been anxiously awaiting my peloton update since my bike arrived on Jan 25th.  In short, I ABSOLUTELY LOVE IT. I have honestly not had a good hard workout since probably 2010. Sure, I have done short workouts, gone for walks, hikes etc but this is a whole different level. This is like HARD. It pushes me and best of all, it makes me want to workout.  The newness will eventually wear off, but for now I love it and love how the bike is making me feel. It’s driving energy, positivity, making me eat better, work better, etc. Overall, I feel BETTER. And that’s the most important thing.  My kids chant “go shaz by the sea!” (My username) while I am on the bike. It’s so cute. They also say “wow mom, you are going so fast” or “you are doing so much better than her!” Haha which obviously makes me giggle.  Favorite classes you ask? Favorite instructors? Ok. These are my absolute favorites.  I love Ally LOVE!! She is so motivating and so awesome....

Vegan Dinner

I’m doing another juice cleanse - but also incorporating some fruits and vegetables within my meals.  I made some buffalo cauliflower (no dipping sauce) which was delicious. I also cooked a red pepper on the burner which turned out amazing.  I cut up a fresh pineapple, sprinkled some cinnamon on it, and tossed it in my air fryer for 10 minutes.  Yum!! Oysters 3 Ways

We got about 200 oysters this weekend - crazy! We originally got a half peck (half of the bucket below) but they said we were now able to get a full peck which is about 100ish. So we got about 100 Saturday and another 100 on Sunday. Whaaaaaat.  So here’s my recommendation for oysters three different ways: 1.) Raw with a little lemon (or cocktail/hot sauce if you prefer).  My fav: 2.) Oysters Rockefeller, with a little siracha: 3.) Oysters with Pasta: I merged two dishes here - lemon zest, pasta, oysters and cheese.  Then added some red sauce and red pepper flakes.  Paired it with an Orin Swift fav that reminds me of one of my favorite friends from LA, Erin.  Miss you!!!! ;) Enjoy the long weekend!
