Four Ingredient Homemade Bread

Snow day = cooking and baking right?  I’ll take any excuse because I love doing it. I made so many fun things today including my 4 ingredient homemade bread, a veggie salad/dip and a sweet potato/ground beef scramble. Here’s my bread and the ingredients.   3 1/4 cups bread flour  2 tsps coarse salt  2 tsps instant yeast  1 1/2 cups water  I mixed it all together - Conor filmed me. We made a little TikTok video together in the morning and it was fun!     Let the bread rise for 2-3 hours and kneed it again, then bake it for 25 min at 425. When the timer goes off, “knock” on the bread and if it sounds hollow, it’s done! Great to have alongside a charcuterie and some vino. Happy New Year! All Things Christmas!!

Well!! Christmas is in full swing and it’s been the best one yet. ❤️❤️❤️ We celebrated our annual “Polar Express Night” on Saturday night with a few new faces. The kids had a ball. We also met Santa today, followed by a visit to the Chateau with Papa (our favorite!).

Mom Weekend Getaway Round 2

Two of my girlfriends and I visited Chatham last year for a Mom weekend getaway. We had massages, fresh air, and lots of good food and wine.  I blogged about it before.  And two years before that, Suz and I spent a weekend at the Chatham Bars Inn.  So naturally, we were due for another trip. My friend Abby suggested a new place in Rhode Island called Shepherds Run which is an old covenant-turned-winery. The place is so unique - beautiful grounds with intricate details inside the tasting area.  When we first arrived, we started out with a wine tasting flight and then later enjoyed a glass on our deck overlooking the vineyards. It was chilly so we ended up back inside and dove into Abby’s charcuterie board. There isn’t food on-site so it was recommended that we bring a picnic or charcuterie. This is What Miscarriage Looks Like…

Me and Jim have some hard news to share. We originally did not think we were going to post something so personal - but while going through this experience, I feel it’s important to share our story and hopefully help other people going through this same emotional roller coaster. It’s sad, it’s frustrating, it’s scary, and quite frankly it is ROUGH.   Here is our story - We surprisingly found out we were expecting over the Fourth of July, our favorite holiday and our favorite week with our favorite people. Naturally, it felt exciting because it was an awesome time. Nonetheless, we were shocked and terrified because our youngest is five. Quite the age gap when you have three kids in 26 months. Fast forward: On Friday, September 24, 2021, when I was 16 weeks pregnant, we found out we were having our fourth boy. We were excited and not at all surprised haha.
