Most Basic/Delicious Chicken Parm Ever

I just indulged in an amazing dinner - tried to stick with a smaller portion. But I made a super basic chicken parm and holy moly it was good. I’m not italian at all - I don’t claim to be. Dad - you would honestly love this.  I tenderized the chicken and breaded each piece with bread crumbs, flour, parm cheese, and garlic salt.  Then threw it in the pan - few minutes each side. After all the cutlets were done, I added half the chicken cutlets to a glass baking dish with sauce and sprinkled with mozz cheese.  The sauce consisted of whole peeled tomatoes, salt, pepper, and garlic salt. So basic. I usually throw in veggies, and garnishes like parsley, and a bunch of different things.  I loved how simple this was ... I also made some penne and asparagus on the side.  This was the kids plate - I added sauce to their pasta but kept their chicken plain.  Oh and I forgot two Peloton classes that I really, really love. Wine Tasting at Home!

Here are two more meals to add to the list! I thought my previous blog post was getting a little long, so I decided to separate it into two posts. Here is a recap of a stuffed zucchini boat (with side of cavatappi pasta) and a chicken dish on top of  a delicious creamy spaghetti squash. 1. STUFFED ZUCCHINI AND WINE TASTING!! We originally planned to make stuffed zucchini boats - then decided to add some pasta to the side - which we tossed with the leftover meat sauce that we used to stuff the zucchinis.  We all had different red wines, so we decided to have an impromptu wine tasting to compare/contrast all the different flavors!  We started with a Sangiovese, then a Malbec, and ended with a Cab Sav. We talked about the different flavors, the different acidities, and different colors/tones/tannins. It was fun! 2. One Pan/Sheet Dishes - Good Week Night Options!

I was on Pinterest the other day and stopped at a salmon dish that looked unbelievable. It was a long sockeye salmon, baked with bright crisp asparagus and fingerling potatoes alongside it. It looked divine (can you tell I'm hungry??). In my head I thought wow that is stunning. And then another part of me thought how simple that was - placing it all on one baking sheet and walking away. The best part? It was all laid out on a piece of parchment paper making cleanup a piece of cake. Ok - now I want cake. But all that had me thinking about "one pot meals" or "one sheet dishes" - not crockpot or anything that sits and cooks all day - I will save that for another post (if you have any crockpot soups or dishes, let me know and I'll add it to the list!). My sister, Chrissy is visiting LA this week and all she wanted was a home cooked meal from her sis. After she hopped off her plane at LAX (with her dream and her cardigan), we went to the grocery store to pick up a few essentials. We decided on chicken and veggies -- but not just any old chicken and veggies. We opted for bacon wrapped chicken, stuffed with spinach and mozzerella cheese. We also cooked some brussels sprouts with bacon pieces and sweet potatoes with rosemary for our side dishes. It was a delish din that hit the spot. Here is a pic of me preppin the chicken breasts...slicing them open to stuff with the fresh spinach and shredded mozzerella cheese. I recommend a smaller opening to actually stuff the chicken, that way it stays more compact.   Chrissy did a FAB job wrapping the chicken breasts in the bacon slices we picked up at the meat counter.
