Snow Day!! So much fun

Image
What a fun, festive few days. My friend Lauren came over after work yesterday and we made an awesome stuffed pepper dinner recipe with some fresh margs w/ casamigos (hoping they’ll sponsor me first, Chrissy).  Pictures to recap:  We did so many fun Christmas things with the boys today - lauren made the boys some homemade Christmas inspired pancakes this morning, then we made brunch Shakshuka (my favorite), the boys went outside and went sledding, then we baked an apple pie. To top it off, we all made magic reindeer food!  Somewhere in there Caden made Lauren some hot chocolate, gave her a blanket, and put the fire on for her - he was adorable and I think he’s in love.  Here are the pancakes! And the shakshuka !  We made this fun reindeer food - to help energize the reindeers on Christmas Eve!  And throw in a little remote learning because you know, #2020! Ha  All for now! xo, Shaz

Sooooooo....how's the cooking, eating, and drinking going?  I feel like I went on a cooking spree this first week and I can really feel it. I haven't been outside much, but trying to do indoor workouts to at least move my body. Last night, I made some peanut butter cookies and filled a few of them with nutella. OMG, whyyyy did I do that? They are so good. As far as meals are concerned, I have been putting together various dishes with ingredients I have in my house. I made balsamic glazed chicken with cauliflower rice and rice pilaf tossed together. I also added marinated artichokes and some cayenne pepper for a kick.. Shayla - this dish especially made me think of that message you sent me on instagram haha. It was random, but tasty. I have to be honest, I overcooked the chicken and it was dry. These were yummy! I made them first. We had leftover spiral ham from Theresa's baby shower. So I made these (sort-of) cobb salads. I added cheddar cheese, egg, hummus, ...

Something Different for Dinner!

Chrissy and Lindsey came over for dinner last night - believe it or not to celebrate Cal being born! This summer has just flown by; we are just now getting together when he is 8 weeks old. Crazy, right?! I have been sick of making my usual dinners that I make when people come over. I think it's a good idea to have 3-4 staple dishes that you are real good at making. That way, when people come over, you are comfortable cooking while socializing/hosting (instead of trying to read a recipe, collect your ingredients, all the while getting distracted and ruining the new dish). Rather, you will feel confident and you'll hit it out of the park. Plus, you can enjoy yourself more! After all, isn't that the point? Then it hit me. What would I like to eat?? There is not much I enjoy more than going out with a bunch of friends and sharing tons of small plates/tapas, while enjoying some really delicious wine. SO since I can't go out for tapas and wine much these days, that...
