Shaz by the Sea

I just indulged in an amazing dinner - tried to stick with a smaller portion. But I made a super basic chicken parm and holy moly it was good. I’m not italian at all - I don’t claim to be. Dad - you would honestly love this.  I tenderized the chicken and breaded each piece with bread crumbs, flour, parm cheese, and garlic salt.  Then threw it in the pan - few minutes each side. After all the cutlets were done, I added half the chicken cutlets to a glass baking dish with sauce and sprinkled with mozz cheese.  The sauce consisted of whole peeled tomatoes, salt, pepper, and garlic salt. So basic. I usually throw in veggies, and garnishes like parsley, and a bunch of different things.  I loved how simple this was ... I also made some penne and asparagus on the side.  This was the kids plate - I added sauce to their pasta but kept their chicken plain.  Oh and I forgot two Peloton classes that I really, really love. We hosted our first Friendsgiving with some of our best friends Julie and Katie and their families and it was a huge success.  We opted for prime rib and a bunch of decadent sides like broccoli casserole, creamed spinach, carrots, mashed potatoes, and even some meatballs with sauce. It was DELICIOUS. Here's a quick recap of the night. We started off opening utensils box from our WEDDING.  I dont think we have ever used these waterford utensils, but figured why not - right? Huge thank you to everyone who came out to Encore last night to celebrate Jim turning 35.  What a freakin FUN NIGHT!!!  I have been telling everyone that it completely flew by.  Other than dinner at Mystique , we didn't have any set plans.  We had a harbor view room, so we could hang up there if we wanted - but the first time I checked the time it was 2AM.  Isn't that just crazy?!  It went by in a blink of an eye.
